Serves 5
Ingredients:
5 nori sheets
half a cauliflower, broken into florets
1 1/2 avocados
juice of 1 lime
1 tsp of dulse flakes
himalayan salt
2 small carrots, julienned
1 cup green lettuce leaves
half a capsicum. cut into strips
half a tomato, cut into strips
1 small lebanese cucumber, cut into strips
In a food processor pulse the cauliflower together until it resembles rice. Then add half a avocado, the dulse flakes, lime juice and himalayan salt and pulse until it comes together.
On a sushi mat lay a sheet of nori and spread a couple of tablespoons of the cauliflower mixture, then place some lettuce, capsicum, carrot strips, tomato and cucumber. Roll up, and using a sharp knife cut into pieces. Wet the knife in between cuts. Serve immediately.
